1 tsp smoked paprika -
Salt and pepper to taste -
For the pineapple salsa: -
1 jalapeño, seeded and minced -
Juice of 1 lime -
Salt to taste -
For serving: -
12-16 corn tortillas (ensure they're gluten-free) -
Fresh cilantro -
Lime wedges -
1/2 red onion, finely chopped -
1/4 cup apple cider vinegar -
1/4 cup fresh cilantro, chopped
